Guess who’s back with a new HEALTHY ETHNIC recipe… kofta (meatballs) in curry sauce!
We’ve partnered with Greeniche Natural Health and Khush Seerat Aunty to share some great health hacks on how to use WATER instead of OIL to shape delicious traditional curry meatballs, and some great freezer tips, too!
Ingredients:
- The meat mixture:
- 1/2 kg minced lean beef or chicken
- 1 heaped TBSP ginger garlic paste
- 1/2 TBSP chilli powder (or more if you prefer spicier!)
- 1 heaped TBSP coriander powder
- 1/2 TBSP cumin seeds
- 1/2 TBSP cumin powder
- 1/2 TBSP Garam Masala powder
- 1/2 TBSP salt3 heaped TBSP chickpea flour
- 2 heaped TBSP rolled oats
- 1 egg
- The curry base:
- 1 onion, diced
- 1 heaped TBSP ginger garlic powder
- 1 TBSP cumin seeds
- 1 TBSP coriander powder
- 1 TBSP turmeric powder
- 1 TBSP garam masala
- 1 TBSP cumin powder
- 1 TBSP salt
- 1/2 TBSP chilli powder (or more if you prefer spicier!)
Steps:
- Combine all ingredients for the meat mixture.
- Mix well to incorporate spices into the ground meat.
- In a large stove-safe pot, mix all ingredients for the curry base.
- Add 1 cup of water into the curry base.
- Transfer curry base to stove and cook for 10-15 minutes until onions soften.
- In the meantime, shape the kofta into balls. Place finished balls on a plate.
- Tip: Use a bowl of water to dip your hands in between rolling the balls so the balls stay firm and round without having to use any oil!
- Take the kofta balls to the stove and place them in to the curry mixture on the stove. Lay the koftas in a single layer in the pot.
- COVER the pot and cook covered for 15 minutes.
- After 15 minutes, uncover the pot as the curry is boiling.
- Cook UNCOVERED for another 15-20 minutes until the meat is completely cooked through and the curry is done!
Be sure to enjoy this delicious kofta curry with a side salad and whole wheat roti for a balanced meal!
