Think curry has to be oily and fatty? Think again! Khush Seerat Aunty shares her ultimate recipe for making curry… the HEALTHY way! Using a simmering cooking technique on the stove and a tomato base results in a rich and saucy curry without adding ANY added oils or ghee! You have got to try this recipe!

Ingredients:
- 3 lbs of cubed, bite-sized pieces of lean mean (eg. lean beef, chicken breast, etc.)
- 1 large (or 2 small) chopped red onion
- 1 packet sugar-free karahi spice mix (OR make your own using the following spices:)
- 2 tsp coriander
- 2 tsp cumin
- 1 tsp turmeric
- 1 tsp salt
- 1 bunch fresh green coriander, chopped
- Cayenne pepper to taste
- MILD: 1 TSP
- MEDIUM-HOT: 1 TBSP
- SPICY: 2 TBSP
- BURN YOUR MOUTH: Anything more!
- 2 TBSP ginger garlic paste
- 1 large tomato, chopped (or 2 small tomatoes)
- 1 large can of diced tomatoes
- Optional: small whole green chilli peppers for extra spice
Steps:
- Placed cubed meat in a large stove-safe pot. Blot meat dry with a paper towel to remove excess juices.
- Add chopped onion, spice mix packet, and ginger garlic paste. Mix well to incorporate.
- Transfer pot to the stove. Simmer on medium heat with pot covered, lifting cover to stir occasionally, until the juices from the meat begin to release, and the onions soften completely, approx. 15 mins.
- Add chopped tomato, and stir to incorporate.
- Add entire can of diced tomatoes into the pot and mix well.
- Optional: Stir in a few small whole green chilli peppers into the pot if you want an extra spicy kick!
- Cover pot and let simmer again covered for mixture to well incorporate, for another 15 minutes.
- Remove from stove and serve!

This curry tastes amazing served with salad, whole wheat roti, quinoa, brown rice, or anything else you would like to enjoy with a saucy curry! Your family won’t believe it’s oil-free – try it out for dinner or plan to serve it for iftar this Ramadan!
